Zucchini Salsa

2 tablespoons olive oil

2 zucchinis, cubed

1 avocado, peeled, pitted and cubed

2 tomatoes, cubed
1 cucumber, cubed
1 yellow onion, chopped
2 tablespoons fresh lime juice

2 tablespoons cilantro, chopped


  1. Heat up a pan with the oil over medium heat, add the onion and the zucchinis, toss and cook for 5 minutes.
  2. Add the rest of the ingredients, toss, cook for 5 minutes more, divide between plates and serve.
