1 tablespoon coconut, shredded
2 tablespoons coconut sugar
1 cup white rice
2 cups coconut milk
½ teaspoon vanilla extract
¼ cup cherries, pitted and halved Cooking spray
- Put the milk in a pot, add the sugar and the coconut, stir and bring to a simmer over medium heat.
- Add the rice and the other ingredients, simmer for 25 minutes stirring often, divide into bowls and serve.
