1 pound chicken breasts, skinless, boneless and cubed
2 shallots, chopped
1 tablespoon olive oil
1 eggplant, cubed
1 cup canned tomatoes, no-salt-added and crushed
1 tablespoon lime juice
A pinch of black pepper
¼ teaspoon ginger, ground
1 tablespoon cilantro, chopped
- Heat up a pot with the oil over medium heat, add the shallots and the chicken and brown for 5 minutes.
- Add the rest of the ingredients, bring to a simmer and cook over medium heat for 15 minutes more.
- Divide into bowls and serve for lunch.
