Turkey and Carrots Soup

1 turkey breast, skinless, boneless, cubed

1 tablespoon tomato sauce, no-salt-added

1 tablespoon olive oil
2 yellow onions, chopped
1 quart low-sodium chicken stock

1 tablespoon oregano, chopped
2 carrots, sliced
3 garlic cloves, minced

A pinch of black pepper


  1. Heat up a pot with the oil over medium heat, add the onions and the garlic and sauté for 5 minutes.
  2. Add the meat and brown it for 5 minutes more.
  3. Add the rest of the ingredients, bring to a simmer and cook over medium heat for 30 minutes.
  4. Ladle the soup into bowls and serve.
