Parsley Beets

Ingredients:

4 beets, peeled and cut into wedges

2 tablespoons olive oil
2 garlic cloves, minced

A pinch of black pepper
¼ cup parsley, chopped
¼ cup walnuts, chopped

directions:

  1. In a baking dish, combine the beets with the oil and the other ingredients, toss to coat, introduce in the oven at 420 degrees F, bake for 30 minutes, divide between plates and serve as a side dish.
