1 red onion, chopped
1 cup white rice
2 garlic cloves, minced
2 tablespoons olive oil
2 cups low-sodium chicken stock
1 tablespoon cilantro, chopped
½ cup fat-free cheddar cheese, grated
½ pound white mushroom, sliced Black pepper to the taste
- Heat up a pan with the oil over medium heat, add the onion, garlic and mushrooms, stir and cook for 5-6 minutes.
- Add the rice and the rest of the ingredients, bring to a simmer and cook over medium heat for 25 minutes stirring often.
- Divide the rice mix between bowls and serve for breakfast.
