Coconut Porridge

4 cups coconut milk

1 cup cornmeal
1 teaspoon vanilla extract

1 cup strawberries, halved
½ teaspoon nutmeg, ground


  1. Put the milk in a pot, bring to a simmer over medium heat, add the cornmeal and the other ingredients, toss, cook for 20 minutes, and take off the heat.
  2. Divide the porridge between plates and serve for breakfast.
