Cilantro Chicken and Lentils

Ingredients:

1 cup canned tomatoes, no-salt-added, chopped Black pepper to the taste
1 tablespoon chipotle paste
1 pound chicken breast, skinless, boneless and cubed
2 cups canned lentils, no-salt-added, drained and rinsed
½ tablespoon olive oil
1 yellow onion, chopped
2 tablespoons cilantro, chopped

Directions:

  1. Heat up a pan with the oil over medium heat, add the onion and chipotle paste, stir and sauté for 5 minutes.
  2. Add the chicken, toss and brown for 5 minutes.
  3. Add the rest of the ingredients, toss, cook everything for 15 minutes, divide into bowls and serve.
