1 pound chicken thighs, boneless, skinless and cubed
2 endives, shredded
1 cup low-sodium chicken stock
1 tablespoon olive oil
1 yellow onion, chopped
1 carrot, sliced
2 garlic cloves, minced
8 ounces canned tomatoes, no-salt-added, chopped
1 tablespoon chives, chopped
- Heat up a pan with the oil over medium-high heat, add the onion and garlic and sauté for 5 minutes.
- Add the chicken and brown for 5 minutes more.
- Add the rest of the ingredients, bring to a simmer, cook for 10 minutes more, divide between plates and serve.
