1 tablespoon olive oil
1 yellow onion, chopped
A pinch of black pepper
1 pound chicken breasts, skinless, boneless and cubed
4 garlic cloves, minced
1 cup low-sodium chicken stock
2 cups coconut cream
1 tablespoon basil, chopped
1 tablespoon chives, chopped
- Heat up a pan with the oil over medium-high heat, add the garlic, onion and the meat, toss and brown for 5 minutes.
- Add the stock and the rest of the ingredients, bring to a simmer and cook over medium heat for 15 minutes.
- Divide the mix between plates and serve.
