Ingredients:
1 cup canned black beans, no-salt-added and drained
7 cups low-sodium beef stock
1 green bell pepper, chopped
1 tablespoon olive oil
1 pound beef stew meat, cubed
1 yellow onion, chopped
3 garlic cloves, minced
1 chili pepper, chopped
1 potato, cubed
A pinch of black pepper
1 tablespoon cilantro, chopped
Directions:
- Heat up a pot with the oil over medium heat, add the onion, garlic and the meat, and brown for 5 minutes.
- Add the beans and the rest of the ingredients except the cilantro, bring to a simmer and cook over medium heat for 1 hour and 35 minutes.
- Add the cilantro, ladle the soup into bowls and serve.
