Ingredients:
4 beets, peeled and cut into wedges
3 tablespoons olive oil
2 tablespoons almonds, chopped
2 tablespoons balsamic vinegar
A pinch of black pepper
2 tablespoons parsley, chopped
Directions:
- In a baking pan, combine the beets with the oil and the other ingredients, toss, introduce in the oven and bake at 400 degrees f for 30 minutes.
- Divide the mix between plates and serve.
